Vegas!

Our trip was AWESOME!  I had never been to Vegas before and it was an experience I'll never forget.  Mike and I stayed in the beautiful Mandalay Bay.


The first night there, Mike and I walked down to Caesar's Palace for dinner (no the real Caesar did not live there).  Our first dinner there was actually TERRIBLE!  It was very expensive, poor quality food...not a good combo.  The one thing that made up for everything was that Mike and I split a very good bottle of wine!  After dinner, Mike and I watched the water show at the Bellagio.


Vegas is so beautiful at night when everything is lit up.



My absolute favorite part of the trip was when we want to Fremont St!  The old Vegas!  I loved the old neon lights.  We didn't get to see it at night all lit up; Mike and I agreed that next time we go, we'll go there at night to see it all in lights!


I think the main reason I liked Fremont St was because I actually sat down at a blackjack table and didn't lose all of my money!


We did our fair share of drinking! 


We did get to see two shows.  We saw Mystere which is a Cirque du Soleil show and it was awesome!  What those people can do is inhuman!  We also saw Vegas the show!  It was good, it made you feel nostalgic for old Vegas.  I wish I could see Vegas when Frank Sinatra was actually performing!

We got burned by a lot of the places we ate, I even got food poisoning at one of the buffets.  The best restaurant was called Hussong!  It was a small Mexican restaurant in our hotel.  I got lobster tacos and they knocked my socks off!  The margarita's were awesome as well!  We had an entire pitcher.



We also enjoyed the buffet at the Wynn.  Other then that, nothing else was that great...


I would go back to Vegas in a heartbeat!  Even though I lost $40 to the gambling gods, it was still an awesome trip!

Vegas or bust!!

I am going to be gone for a week...go ahead and wipe your tears...



Mike and I are heading to VEGAS!  We wanted a get away and I have never been there before.  We will be gone for a week, but get ready for some Vegas posts when we get back! 


I hope you all have a FABULOUS week!  I'll be lounging by the pool, sipping some fruity drinks and stuffing my face at the buffets!

Jenny and Steve's Wedding

The first wedding of the season was a smash!  Mike's good friend that he has known since high school, Jenny,  got married this weekend.  It was an absolutely beautiful wedding.  Every detail seemed perfect.  The location was stunning.  It was at a country club in Phoenixville. 

Look at how cute the seating cards were!  They were in real grass too.

We had our cocktails, my first wedding drink (and favorite) is a dirty martini!  It is always a good warm up to a good night!


The beautiful new couple made their first debut!  How cute are they?!


They shared their first dance and the party got started!  The band wasted no time in getting people up and dancing.  They had almost everyone on the dance floor even before dinner was served.  The food came and we dug in!  I know that wedding food is boring for most, but come on, this is a food blog, I have to talk about the food!  Up first was the salad.  It was a spinach salad with dried cherries, candied walnuts and blue cheese dressing...YUM!


Then came more drinks!  I finished my dirty martin and my wonderful boyfriend went to get me another drink from the bar.  While he was up getting me my vodka, club, with a splash of cranberry, the server came around with wine, so I got a glass of that as well!  


When ever we go to weddings, I always have entree envy of Mike.  He always gets the filet and I typically get the fish dish, this time I learned my lesson.  I got the filet and boy-o-boy was I glad that I did!  It was SO good and cooked perfectly!


At the end of the meal Mike made me an adorable little bunny out of his dirty napkin.  Trust me...it was cute!


One of the funniest things that happen was that Mike S. got something stuck into his teeth and he used a ribbon to get it out.  When you are desperate you go to all sort of lengths!



Then it was time to get dancing again!  WOOT!!

Then we got the groom, Steve's nephew sung for everyone!  He sung "Hey Soul Sister".  It was AWESOME!!!  (sorry the picture sucks, my little point and shoot wasn't getting the job done)


The band was really REALLY good!  They kept everyone dancing all night!  They even came into the crowd to get us even more amped! 


Mike got REALLY into it!  Good thing he is so adorable...


Then we had another break....CAKE!  It was really good and they served it with a chocolate covered strawberry!  So good!


It was great to see friends that we don't get to see often!



And of course spend an awesome evening with my favorite person in the whole wide world!


I was able to sneak in a quick picture with the beautiful bride!  Isn't she breathtaking?!


The whole night was A-MA-ZING!  I don't know how it could have been any better...

Shrimp Avocado Salsa

Adrienne generously invited Mike and I over on Friday night for food, fun and cocktails (couldn't think of a "F" word for alcoholic treats).  Adrienne and I both drank Skinnygirl margarita's (I love Bethany Frankel)!


I made Mike try it...


He was reluctant, but he liked it!  He still stuck with beer thought.


The other guest included the devily handsome Rocky, Adrienne's 8 month old Old English Chocolate Lab.  So CUTE!  He is 85 lbs of pure muscle!


Since Adrienne has a gimp hand, I helped her prepare the Shrimp Avocado Salsa.  We both follow all of the same food blogs and we saw this one on Gina's Skinny Recipes

What you Need:
  • 1 lbs shrimp (if frozen, defrost)
  • 2 avocados
  • juice of 1 lime
  • 1 jalapeno
  • 1/2 red onion
  • 1 large tomato or 2 plum tomatoes
  • salt and pepper
If you are using frozen shrimp run COLD water over them until they are defrosted.  It takes about 7 minutes.  Let them hang out and dry until you are ready for them.


Cut your avocado down the middle and take out the pit.


Score the avocado using a paring knife.  Using a large spoon, scoop out the flesh all the way down to the skin.  Place the avocado cubes into a good size mixing bowl.



Half the jalapeno and discard the membrane (white stuff) and the seeds.  Mince very fine.  Throw in with the avocado.

Squeeze the juice of a whole lime into the mixing bowl.


This will help prevent the avocado from turning brown.  Plus, it adds such a great taste!

Dice the tomato, discarding the slimy seeds.  Try to make them the same size as the avocado cubes.


Throw into the party.


Mince the red onion and put into the bowl.  Doesn't the onion look like a shell?!


Since the shrimp were kinda shrimpy (hehe), we just cut them in half.  If they are large shrimp, cut into thirds.


Salt and pepper the mix to taste.  Give a good stir to combine all the flavors.


Place in the fridge for at least 10 minutes to let the flavors mingle and you are ready to eat!


Serve with tortilla chips.  Beware, this stuff is addictive!  I ate SO much of it!  After seeing pictures of it, I wish I had more right now!!

She also made one of her famous cookie cakes.  She makes the absolute BEST cookie cake I have ever had!  This is Adrienne below.  Look how cute she is holding her drink with her green hulk casted arm!


We had a great time!  Her new home is GORGEOUS!  Mike and I left there completely stuffed!  I had to go crumble in bed and let the food coma subside..
